Abstract:This study aimed to investigate the effect of different drying methods on qualities of dried watermelon. Watermelon outer green peel was removed then the fruit was cut into triangle shape pieces with rind and flesh. The samples were dried by different methods namely atmospheric freeze drying (AFD), vacuum freeze drying (FD), and hot-air drying at 70 C (HD). Hardness value, color, and lycopene content of the dried watermelon were analyzed. The results showed that the hardness of dried watermelon from HD significantly higher than the other two methods. The color hue angle value showed that AFD and FD could significantly preserve the green color of peel better than HD while all methods gave similar flesh color. The lycopene content of all samples were lowered after drying but the values from ADF and FD were not significantly different and approximately 2 times higher than that from HD. This study showed that AFD is a potential method for preparing dried watermelon with different texture from FD but comparable lycopene content.
