Topic:Application of near-infrared spectroscopy to establish prediction models for water activity and moisture content in dried fruits

Abstract:This research aimed to study the feasibility of using near-infrared spectroscopy (NIRS) to predict water activity (aw) and moisture content (MC) in dried fruits. Eight types of dried fruits were used. Samples were then measured at wavenumbers range of 12500-3600 cm-1 in diffuse reflectance mode. Partial least squares regression was used for model development from 100 samples. The results showed that R2, RMSEP, bias, and RPD values of the models were 0.9896, 0.0085, -0.0005, and 9.80, respectively for aw prediction and were 0.9682, 1.280%, -0.3850%, and 5.9, respectively for MC prediction. In addition, the developed prediction model was used to predict aw and MC of 20 dried mango samples and it was found that an average errors of 3.10% and 10.98% were obtained.
