Topic:Food consumption behavior survey of the elderly for develop of meal replacement drink
Abstract:This research aimed to survey the food consumption behavior of the elderly, to develop a recipe for a meal replacement drink for the elderly. Results from the survey of 127 elderly persons, showed that they don’t eat 3 meals in one day. They almost drink coffee and tea instead of lunch. They would like to drink meal replacement which is easy to swallow, good for bone and digestion. Properties 3 commercial meal replacement products, Prosure, Ensure, and Mutera, were measured. It was found that color values L*a*b* of all 3 products were significantly different (p≤0.05). They had pH in a range from 6.5 to 7.1. Their viscosity behavior was pseudoplastic. Apparent viscosities at shear rate 34.2 s-1 of Mutera, Prosure and Ensure had been 29.6 mPa.s, 11.5 mPa.s, and 5 mPa.s, respectively. Sensory evaluation of 3 commercial products were measured using 9-Point hedonic scale and Just about right(JAR). Their liking score of all attributes were not significantly different (p≤0.05). Result from Principal component analysis(PCA) showed that sweetness, oiliness, viscosity, and color were in the same principle component with overall liking. And those attributes have total penalty value greater than 0.25 which should be considered to improve. Therefore, this information will be used as a guideline for product development.
