Topic:The development of meal replacement drink for the elderly
Abstract:The elderly often has problems with chewing and swallowing. They tend to have problem of bone disease and constipation easily, so they should consume a sufficient amount of calcium and fiber. Therefore, 2 meal replacement drinks for the elderly, calcium supplementation formulas for bone maintenance and dietary fiber supplements to help the digestive system were developed. For the calcium supplementation formula, levels of black sesame were varied at 0.17%, 0.26%, and 0.34%. For dietary fiber supplement formula, ratio of red jasmine brown rice to red beans were varied at 50:50, 60:40 and 70:30. It was found that levels of black sesame and ratio of red jasmine brown rice to red beans significantly affectted pH, total soluble solid, color and viscosity of the products (p≤0.05). Sensory tests were performed using the 9 point Hedonic and JAR method. It was found that the amount of black sesame in the calcium supplement formula had no significant effect on the liking scores of all attributes (p>0.05) but the formula with 0.26% black sesame received the highest overall liking score. For dietary supplement formulas, the ratio of rice to red beans significantly affected the liking scores of color, viscosity and flavor but did not affect liking score of sweetness and oiliness (p≤0.05). The formula with ratio of rice to red beans at 50:50 received the highest liking scores for color, viscosity, flavor and overall liking. The developed products use natural raw materials, resulting in calcium or dietary fiber are similar to the commercial.
