Abstract: | Chocolate is a high antioxidant confectionary. The object of this study was to determinate of monomeric catechins (catechin and epicatechin) in chocolates by HPLC method (fluorescence detector). Epicathechin was a major monomeric catechins in chocolates. Dark chocolates presented the highest catechin and epicatechin contents, followed by milk and white chocolates. We found a linear relationship between total catechin and epicatechin contents and cocoa mass content on their labels (R2 = 0.6537). The correlations of epicatechin was more intense than catechin (R2 = 0.7149 and 0.6358 respectively) |
