Topic: | Effect of Sorbitans on Crystallization of Coconut Oil |
Abstract: | This research studied the effect of sorbitans on the crystallization behavior of coconut oil using pluse-nuclear magnetic resonance, differential scanning calorimeter and polarized light microscopy. The sorbitansused in the study were sorbitanmonolaurate (span 20), sorbitanmonostearate (span 60) and sorbitantristearate (span 65) at different concentrations (0, 0.5 and 5.0% w/w). The crystallization rate and n value were obtained by using the Avrami equation. As the concentration of the added sorbitans increased, the crystallization rate decreased for span 20but increased for span 60 and span 65. Difference in concentration exhibited strong effect on the DSC crystallization thermograms but no effect was observed with melting thermograms. Finally, all sorbitans resulted in spherulitic morphology for the coconut oil crystals. An increased in concentration let to larger crystal size for span 20 and span 60 but smaller crystal size for span 65. |
