AbstractThe objective of this work was to study the potential of near infrared spectroscopy (NIRS) to determine moisture content, total mold and aflatoxin B1 content in corn kernel. Partial least squares (PLS) regression was performed for building models. The ranges of moisture content and total mold in samples were 8.99 - 18.00% and 2.0  102 - 2.7  104 cfu/g, respectively. It was found that the NIRS was able to predict moisture content in corn kernel with R2 of 0.92, RMSEP of 0.61% and a bias of -0.04%. However, the method was unable to predict the total mold in samples (R2 of 0.18, RMSEP of 2.5  103 cfu/g and a bias of -258 cfu/g). In addition, using the NIR spectra with discriminant analysis could not differentiate corn kernels with and without mold infection. The feasibility of NIRS to predict aflatoxin B1 (AFB1) content using dry-extract system was preliminarily studied and high R2 of 0.97, low RMSECV of 0.05 mg/L and a bias of -0.0003 mg/L were obtained.
