AbstractKaffir lime leaves have been widely used for Asian traditional cooking. A common way to dry kaffir lime leaves is using a tray dryer. Due to its energy cost, the solar greenhouse dryer is promoted for drying Thai culinary herbs. In this study, the total phenolic contents and antioxidant capacity of dried kaffir lime leaves were investigated. Leaves were washed, air dried and then dried in a solar greenhouse dryer. The experiments were conducted in two replicate. Total phenolic content and antioxidant capacity of fresh and dried leaves were examined using folin-ciocalteu reagent method and trolox-equivalent antioxidant capacity assay, respectively. The drying time for drying kaffir lime leaves for initial moisture contents of 66.09±2.06 % to final moisture content 7.41±0.07 % was 5 hours. The total phenolic content of fresh and dried kaffir lime leaves were 16.65±0.46 and 10.93±0.17 mgGAE/g dry sample, respectively. The antioxidant capacities of fresh and dried were 16.75±0.13 and 49.74±5.26 µmolTE/g dry sample, respectively.
