The effect of acetlylated distarch phosphate on physical properties of sterilized Tub Tim Grob
AbstractProduct consisting of tapioca starch which is processed at high temperature and surrounded with water such as Tub Tim Grob often has problems of over swelling or bloating during storage. When starch gel of Tub Tim Grob is swelling, its texture becomes soft and some pieces of starch gel ripped out from the products. Therefore, the purpose of this study was to investing the effect of adding acetylated distarch phosphate combined with tapioca starch on physical properties of Tub Tim Grob sterilized at 116 Celsius for 33 minutes (F0 =5) Tub Tim Grob coated with tapioca starch and that coated with tapioca starch and acetylated distarch phosphate were compared. All samples containing Tub Tim Grob with coconut milk syrup were kept 35 Celsius for 1 month. Changes in weight loss of coconut milk syrup, gained weight of Tub Tim Grob granules and texture of starch gel and Chinese water chestnut was observed. According to the experimental results, it was found that Tub Tim Grob samples containing tapioca starch replaced with 90% of acetylated distarch phosphate had lower coconut milk syrup’s weight loss and Tub Tim Grob gained weight. It had percentage of ripped out starch lower than control(100% tapioca starch). In addition, texture of Chinese water chestnut of two samples were not significant different (p>0.05).
